Parmesan Lemon Tilapia

Well, it has been a little while ... but I'm back. I was looking through my blog and the last time I posted was January 22nd. I guess that work and school and life have got the best of me, but I am back for more.

Since January 22nd, a lot has happened. There was my birthday, Valentine’s Day, my husband’s birthday … There are not too many specifics I can say, but I am assuming that in 3 + months worth of time, a lot has happened.  My husband and I are planning a little mini trip for our approaching one year anniversary (I can’t even believe it).  I am thinking NYC to actually do the touristy thing since every other time I have gone it has been rushed and I broke a hip (seriously – I am a hot mess).  Needless to say, I love my newlywed more than ever!

For dinner tonight I made parmesan lemon tilapia with garlic roasted cauliflower and balsamic roasted tomatoes. I cut up some tomatoes and sprayed them with olive oil spray, a dash of salt, and some balsamic vinegar. Now I normally hate when people on tv say “Your nose will know when they are done” … but literally, my nose knew.  Maybe I have a smart nose, or maybe this is only because I got distracted opening the door to beautiful flowers my friend sent me that I never set a timer!  I would say it was about 15 minutes and the tomatoes came out perfect.  While the tomatoes were roasting, I was steaming some fresh cauliflower.  Once the cauliflower was tender, I placed them on the same pan that had the balsamic bits leftover from the tomatoes.  I seasoned the cauliflower with garlic powder and fresh garlic and roasted them for 20 minutes.  When they were finished, they were perfect and had this beautiful caramelized look and a touch of sweetness from the balsamic. For the tilapia, I took the juice of one lemon, a teaspoon of fresh garlic, ¼ cup shredded parmesan cheese, and a dab of olive oil mayo to bring it all together. I spread the mixture on two tilapia filets and sprinkled with basil and broiled them for about 6 minutes.

The meal was delicious!  I couldn’t eat all of mine, but like usual, I have my almost-not-so-new-lywed to help me finish!  At what point does a newly married couple stop being newlyweds and start becoming an old married couple?  Is there really any in-between and does it really make a difference?  I find things to love about mine more and more every day … so until the day I don’t (which won’t happen), we will always be newlyweds!
